yum, yum, coconut!

I made these cupcakes for our family get together on 4th of July. They are called Tropical Paradise Cupcakes and the recipe came from this book: The Artful Cupcake.

They were SO delicious! Especially for people who love coconut! The cupcake itself has banana, pecans, coconut and pineapple in the batter. The frosting is Orange Cream Cheese and is included in the book, too. The cupake could be served as a muffin, but you know it’s so much better with that yummy frosting! Mmmm! Mmmm!

I have to tell you, I love that cupcake book. It’s the one I use the most and so far all the recipes I’ve tried have been very yummy! You can find it at your local Barnes and Nobel, too. If you want to try some yummy cupcake recipes, I highly recommend picking up a copy for yourself!

    Emily – these cupcakes look SOOO good. I went online to find the book, and guess what? They’re highlighting this recipe (with the frosting) in a preview of the book! So, I’ve even got the recipe. Thanks for sharing!
